This fine mix of 80% Espadín and 20% Bicuishe is crafted by artisan, Don Valente Angel. The plants are wood-roasted in below-ground earthen pits and the juice is extracted through slow stone-milling. It is then fermented with native yeasts in open wooden vats, and is completed by double distillation in small wood-fired copper pot stills. Its nose holds floral and fruity notes. The palate is led by the tang of sweet agave with a touch of lightly caramelized sugar and baking spice, some nutty almond, and subtle smoke. The finish packs a spicy punch and earthy minerality. A pleasure to sip straight or to star in a white negroni.
