Additional info:
Indigenous yeast fermentation with skin contact.  After resting on its lees in tank, grape must (from dried garganega grapes) is added to the wine, starting the second fermentation with natural sugars and native yeasts.

Giovanni Menti is a small, biodynamically farmed estate located in the volcanic hills of Italy's Veneto region.  Now in the hands of fourth generation winemaker Stefano Menti, the winery no longer adheres to DOC regulations as Stefano believes they are a limiting factor for small, low-intervention producers like himself.
