Additional info:
Indigenous yeast fermentation in concrete tanks with prolonged maceration on the skins (30 days).  Aged in used oak barrels and bottled without fining or filtration.

Olek Bondonio was a champion snowboarder before becoming a winemaker in his hometown of Barbaresco.  He farms his family's historic vineyards with minimal intervention and the use of biodynamic practices.  Olek eschews additives and excessive oak in the cellar, producing wines are fresh and understated yet undeniably Piemontese.
