Style: Blanc Brut Nature Champagne
Producer: Champagne Drappier
Grapes: 100% Pinot Noir
Where: Urville, Champagne
Country: France
Taste: Disgorged in December 2023, it leaps from the glass with lush aromas of crushed berries, apricot, brioche, honey, and smoky wet stones. The palate is broadly structured, with a pillowing mousse and a rich, chalky texture. A powerfully built wine with the structure to gain in complexity. 100% Pinot Noir with no dosage. It contains only the wine's natural residual sugar at less than 2g per bottle. Moreover, the use of an absolute minimum of sulphur gives the wine the freedom to express itself totally. On the nore there is crisp apple and at the same time ripe peach. On the palate it is upright and pure, with abundant finesse and freshness.
Vibes with: Rich, savory dishes — think roast chicken, aged cheeses, or shellfish in butter sauce — or simply on its own to let the complexity unfold.
Organic Farming
Why I carry it: This is a producer with real depth — carbon neutral, organically farmed, family-run for eight generations, and a history that includes pouring for Charles de Gaulle. A Brut Nature like this is for the Champagne lover who wants transparency and structure over sweetness, and it always sparks a great conversation at the register.
.
About the Wine: no sulphur is added to this cuvée during the different stages of vinification, allowing the Pinot Noir to express itself in perfect freedom. Without dosage but even so exhibiting a remarkable roundness thanks to the maturity of the fruit and the time spent down in our cellars, this cuvée evokes lovely apples and Williams pear, with a hint of citrus fruits.
.
About the Producer: This is a special one — a Champagne with a story that stretches back nearly 900 years, since Saint Bernard first re-established vines on this hillside in 1116. Champagne Drappier has farmed Urville ever since, and the Drappier family has run the estate since just after WWII. This cuvée is 100% Pinot Noir — the grape that's been the heart of Drappier's identity since Michel Drappier's grandfather, "Père Pinot," championed it back in the 1930s — and it's organically farmed, with zero dosage and almost no added sulphur, letting the fruit speak entirely for itself.
Michel Drappier now manages the vinification process (and has done since 1979), while André Drappier – with 74 harvests of experience – keeps a close eye over the vineyard, which spans over 62 hectares (or 1,000 hommées, the agricultural measure used in the region) of land owned by the estate, and 50 hectares in contractual arrangements with other growers. In 1988, deep cellars that had been dug into the chalk around Reims during the reign of Napoleon III, became part of the family estate. In these cool underground tunnels lie the most precious bottles, in particular the Grande Sendrée, perfected by our most faithful ally: time. Since 2016, the eighth generation of the Drappier family has joined Michel and his wife Sylvie, to work on the family business. Charline, born in 1989, is gradually taking over marketing, while her brother, Hugo, born in 1991, is responsible for viticulture and oenology. Antoine, born in 1996, shows a keen interest in animals and nature, and ploughs part of the organically-farmed vineyard with his horse. The Drappier estate also includes some old orchards, a vegetable garden, and a farmyard. It has now earned the well-deserved accreditation of “Carbon Neutral”.
Disgorged in December 2023, it's a powerhouse in the glass: lush aromas of crushed berries, apricot, brioche, honey, and smoky wet stone, backed by crisp apple and ripe peach. The palate is broad and structured, with a pillowing mousse and a rich, chalky texture — the kind of Champagne built to keep evolving in the glass and in the cellar. Because there's no dosage to mask anything, what you're tasting is pure site and pure fruit, rounded out by real maturity and time spent aging in Drappier's cellars.
