Domaine François Mikulski Meursault Meix Chavaux is an exquisite white wine crafted by Domaine François Mikulski using grapes from the esteemed Meix Chavaux climat, located within the prestigious A.O.C. Meursault in the renowned Côte de Beaune of Burgundy.

 
Specifically, the Meix Chavaux vineyards are situated in the northwest of Meursault, bordering the A.O.C. Auxey-Duresses. Here, François Mikulski meticulously tends to the 0.47 hectares planted on Jurassic marl and marly limestone soils. The Chardonnay vines, averaging 35 years of age, are cultivated using organic methods.
 
While this plot is currently designated merely as a vineyard with a municipal appellation, it would be a mistake to underestimate its potential based on this classification alone. Despite not holding the same cachet as the premier cru or grand cru vineyards, the terroirs of Burgundy, including this one, are celebrated for their exceptional quality and diversity. This was further acknowledged in 2015 when UNESCO accorded the Burgundian climats the status of a World Heritage Site, a testament to their superb condition. Rest assured, the excellence of the Domaine François Mikulski Meursault Meix Chavaux is captured in each of the 800 bottles produced, regardless of the absence of 'grand' or 'premier' on its label.

François’ Mikulski’s father was Lieutenant Mieczyslaw Mikulski who escaped from occupied Poland in 1939, fleeing to England and joining the Resistance troops of the Free Polish Forces. There he met his future wife, a Burgundian woman working on an English army base, and moved to Brussels where François was born and raised. Luckily for us and the world of wine, François spent his formative summers in Burgundy, where he fell in love with the agrarian lifestyle and determined that he would one day make wine himself. He inherited his first plots of Meursault in 1992 from his late uncle, Pierre Boillot. Since that time, he has relentlessly pursued his authenticity, purity and elegance through acute attention to biological balance in the vineyard and terroir minded élevage practices in the cellar. After meticulous sorting in the vineyards the grapes are de-stemmed and lightly pressed. Natural yeasts are used in the fermentation after which the wines undergo an élevage 10-12 months. François typically restrains his new oak use to about 20%, believing that excessive wood masks full expression of the terroir.

The soil, meticulously ploughed and nurtured, becomes a fertile canvas for the expression of terroir-driven flavors and aromas.

With meticulous attention to detail, yields are kept deliberately low, allowing the vines to channel their energy into producing grapes of unparalleled quality. Whether it’s the whites, with yields hovering between 45 to 50 hectoliters per hectare, or the reds, where yields are maintained around 35 hectoliters, each vintage from Domaine Mikulski is a testament to the uncompromising dedication to excellence.
