Taste: Benoit Marguet took over his family's vineyards in 2009, converting the 10 hectares in Ambonnay to Demeter certified biodynamics (2 hectares of which are sold to Krug). The natural wines are native fermented, with no added sulphites, and vinified by plot in wooden vats, with extended elevage in small older barrels. Yuman 19 releases intense and refined aromas of jasmine, orange peel, daffodils, blanched almonds, cardamom and pickled ginger. Flavors are tense and vibrant with a pleasing texture of fine bubbles, lively acidity and a mineral vein giving freshness and depth.

The blanc de blancs made from 100% Chardonnay, sourced from Premier Cru vineyards located in the village of Vigny in the Montagne de Reims. The vinification follows a natural and terroir-respectful approach: spontaneous fermentation in oak barrels with indigenous yeasts, without filtration or fining. The wine sits on the lees for two years and is finished with no dosage, classifying the wine as Brut Nature with 0 G/L residual sugar.
