All the decisions regarding business are taken together by the family members in the evening after dinner. Organically Cultivated Vineyards Producing Friuli Doc Wines. The vineyards in the Isonzo river valley feature low calcareous clayey soils and the perfect microclimate, ideal for making unique, full-bodied wines. Friuli Isonzo DOC, Venezia Giulia, and Collio DOC are the regions where their vineyards are present. Sustainable techniques are used so that grapes grow naturally, and the environment is protected. Most of the vineyards are aged between 10 to 20 years, and grapes are harvested between September and October. Friulano, Pinot Grigio, Sauvignon, Gialla, Ribolla, and Traminer are the grapes grown here. The best grapes are taken to the cellar and used to make their distinct red, white, rose, sparkling, and dessert wines. They use pre-fermentation cool maceration to extract the aromatic contents from the grapes. Fermentation under controlled temperatures gives the right taste and aroma to the wines. After fermentation, the wines are aged in wooden barriques to attain the final wine with intense aromatic notes.
