100% Airén, organically grown and hand harvested. Crushed, natural yeast fermentation, bottled under crown cap with method ancestral. Disgorged less than a year later and bottled unfined, otherwise unfiltered, and zero SO2. Dry, light, low acidity, clean with foamy bubble pressure. Annual production is 400 bottles.
