Critic tasting note: (2019 vintage) "Elderberry and blackberry, black pepper and tar, herbal tea, dried meat. The palate initially reveals an oily base, then a grainy tannin in a strong dose, the acidity appears ripe and seamlessly integrated, the fruit is still closed, but indicates a very large ageing potential for development behind the very dense and at the same time ʺwarmʺ extract core.
Organic Farming
The 2019 Guillaume Gilles Cornas is a highly regarded, traditional, and organic Northern Rhône red wine (100% Syrah) from a protege of Robert Michel. It is known for its deep, complex, and "sauvage" profile, offering notes of black fruit, violets, smoked meat, and iodine. This powerful wine has significant aging potential and is best enjoyed after 5–10 years in the cellar.
Dense, structured, and elegant with pronounced tannins, notes of blackberry, olive, and iron.
Whole bunch spontaneous fermentation in concrete vats. Racked off of lees following fermentation. 18 months élevage in neutral demi-muids. Unfined/Unfiltered. No more than 60mg/l total SO2.
