Critic tasting note: "Quite a funky nose, thanks to a combination of lemon Starburst, caramel-dipped green apple, orange peel, star anise, and dill. The heat on the palate is fierce, but once it simmers down (water is your best friend here), some more unusual flavors pick up, among them pumpernickel, salt-and-vinegar chips, and sweet clementine. The finish, while drying and a tad short, is enjoyable; rye fans should find plenty to love here, but it’s certainly not for everyone" - Whisky Advocate

Aged Jamaican rum further matured and independently bottled by Proof and Wood in Bardstown, Kentucky. Part of Proof and Wood’s “Curated Collection” of unique and experimental batches. Pot-distilled Jamaican rum was aged in Jamaica for two years in ex-bourbon barrels before traveling to Kentucky for a further three years of aging in ex-rye barrels
Hay and vanilla-softened esters precede a palate of English Breakfast tea and toasted cinnamon & clove with a hint of dehydrated strawberry on the finish.
