Practicing organic, single vineyard, estate bottled, drip irrigation, 40 year-old Vilana vines/20 year-old Malvasia, altitude 400m.
Vinification: Classic white wine production with cold maceration. Each variety is fermented separately at controlled moderate temperatures in stainless steel. The final blend rests on fine lees for several months before bottling to enrich texture and complexity. Grapes are grown in the Pezá region of Crete (PDO), benefiting from high-altitude vineyards and cool breezes that help develop aromatic fruit and balanced acidity.
