About the Wine: Chiussuma Pajarin 2020 is a rare white wine made from 100% Erbaluce grapes by the small producer Chiussuma in Piedmont, Italy. Erbaluce, native to the alpine hills of Northern Piedmont, is known for its bright acidity, saline minerality, and subtle herbal complexity—qualities that Chiussuma brings out beautifully in their “Pajarin” bottling. Grown on glacial moraine soils and farmed organically, the 2020 vintage was fermented with native yeasts and aged in stainless steel to preserve freshness and transparency.

About the Producer: In 2016, Matteo Ravera Chion and his wife Alessandra created Chiussuma on the mountain terraces of Carema, Piedmont's most vertiginous sub-region. They restored ancient wooden pergola trellises and now coax elegant Nebbiolo from vines anchored by stone pillars and tended by three friendly donkeys. The wines are small in volume, enormous in character.
