Powerful and finesse-driven, the small bubbles emphasize taut vitality resonating on the palate: a serious champagne. Guava curd-like texture punctuated by a chablis-like salinity and lemongrass aromatics. As noted on his label “Les Jardins de la Porte de Troyes” the base vintage is 2018 and is a blend of 80% pinot noir and 20% chardonnay from most vines planted in 1971. Made in demi-muids (very large older oak barrels), it was then aged six months in cask and disgorged this past March. About 450 cases produced.

Taste: Pours brassy gold with heavy mousse and a quick bead. Golden crisp apple, brioche, yellow plum, hints of lime, oyster shell, sea spray, and a touch of praline on the nose. Palate carries over, highlighting yellow fruit and salty minerality.
Organic & Biodynamic Farming. Bruno Bienaimé produces this Cremant du Jura Blanc de Blancs Brut Nature, 100% Chardonnay with fine, fresh bubbles that veer towards notes of apple and pear. On the palate, a lovely acidity balances the rest.
