Made from 100% locally sourced New York heirloom corn (80% corn and 20% malted corn) and using the "farm to bottle" green/environmental approach working with local people and resources. Sweet, round and fatty with full grain mash notes that have lovely caramelized and butter notes.
This V.S. Cognac develops a whole bouquet of rancio notes, with aromas of coffee, candied fruits, tobacco and spices. In mouth, it is round and fruity.
Taste: Light and refreshing. Crisp plum notes with a snappy gingerbread finish. Proofed down to 17% ABV, approachable and sessionable. Best enjoyed chilled straight or on the rocks.
