Primary fermentation with indigenous yeasts; base wine is unfined and unfiltered. Secondary fermentation via traditional method in bottle followed by nine months’ aging sur lies before disgorgement. No dosage.

Filipa Pato's family has producing wine in Beiras for centuries. Her father, Luis Pato, is one of Portugal's legendary winemakers, and was instrumental in resurrecting the Bairrada wine region and its authochthonous grapes. Filipa started her own project in Bairrada in 2001, farming 12 hectares of indigenous grapes biodyamically and making terroir-expressive wines with judicious minimalism.
