About the Rhum:Unaged rhum agricole produced by Rhum J.M in Macouba, Martinique. Distilled from sugarcane juice; sugarcane is grown on the J.M estate and surrounding farms located near the distillery. ugarcane is crushed within one hour of harvest and open fermented with French baker’s yeast for 24 hours. Distilled on a Creole copper column still. Distillate is proofed with spring water sourced from Mt. Pelée; the rhum is rested and gradually reduced for 6 months before bottling. With the highest ABV in the Rhum J.M lineup, the Blanc 55% accentuates the potent vegetal and mineral qualities of Rhum J.M’s house style while offering even more cocktailing versatility with its ability to stand up to increased dilution.
Taste: ia Prata preserves the sweet aromas and flavors of the sugarcane, with a pleasant spiciness at the end. Excellent to be drunk pure and perfect in the composition of the most varied cocktails. It was considered one of the three best white Cachaça.
Some spiced rums are merely colored, not aged; but this nut-brown spirit is made from a base of rum aged for four years in oak barrels. In that context, the substantial, oaky flavor makes perfect sense, rounded out by vanilla, dusty nutmeg and allspice.
